Honey Mustard Chicken & Lavender Flatbread
Ingredients:
1 chicken breast
2 T dijon mustard
1 clove garlic, minced
1 1/4 tsp salt
1 flatbread
Microgreens
2 T honey
1/4 tsp pepper
1/2 cup ricotta
DIRECTIONS:
In a medium bowl, whisk together the honey, mustard, garlic, salt & pepper, and 1 T Herbs de Provence Olive Oil. Set aside half the marinade for later. Place chicken in the remaining marinade. Cover and refrigerate for 30 minutes.
Drain the moisture from the ricotta with a cheese cloth.
Preheat the grill to high and oil the grates. Remove the chicken from the marinade and grill for 3 minutes on each side. Let ret before slicing into small strips.
Brush both sides of the flatbread with remaining Herbs de Provence Olive Oil. Spread ricotta over the flatbread and top with chicken. Season with salt & pepper to taste. Grill for 2-3 minutes until lightly brown. Remove from grill.
Drizzle the flatbread with the marinade that was set aside, along with the Lavender Balsamic. Garnish with micro greens.
