Salmon, Avocado & Cucumber Salad

YOU WILL NEED:

  • 4 skinless salmon filets

  • 3 avocados

  • 1 cucumber

  • 1-2 bags salad greens

  • 4 tbsp chopped mint

  • 1 lime, zested and juiced

  • 2 tsp honey

  • 3 tbsp Lemon Olive Oil (and a little extra for the salmon!)

  • 1tbsp Cucumber White Balsamic

Instructions:

  1. Season the salmon (with whatever seasonings you prefer!) and rub with Lemon Olive Oil

  2. Mix the mint, lime zest & juice, honey, oil and vinegar together

  3. Half, stone, peel & slice the avocados

  4. Half and quarter the cucumber lengthwise, then cut into slices

  5. Divide greens, avocado & cucumbers between plates, then drizzle with half the dressing

  6. Heat a non-stick pan. Add the salmon and fry for 3-4 mins on each side until crisp but still moist inside.

  7. Put a salmon fillet on top of each salad and drizzle over the remaining dressing. Serve warm.
