Spring Poppy Salad
INGREDIENTS:
3 eggs, hard boiled
2 cups butter lettuce
2 cups arugula
2 radishes, shaved
2 stalks of asparagus, shaved into ribbons
1 cup snap peas, sliced
1/2 cup fennel, shaved
1 T fresh mint
1/4 cup Milanese Gremolata Olive Oil
1/4 tsp sea salt
1 T shallot, minced
1/4 tsp dijon mustard
2 tsp mayonaise
1 T poppy seeds
DIRECTIONS:
In a large bowl, combine the butter lettuce, arugula, radishes, snap peas, fennel and mint
In a small bowl, whisk together olive oil, vinegar, salt, shallot, mustard, mayo and poppy seeds. Divide salads between 2 bowls, top with hard boiled eggs and dressing. Serve immediately!
