Grilled Spring Asparagus Salad
Ingredients for salad:
2 bunches of green asparagus
2 medium watermelon radishes (brunoised)
1 large shallot sliced thin
¼ cup crumbled feta cheese
1 large yellow bell pepper (small diced)
1 cup of sliced snow peas
1 cup of rough chopped chervil
¼ cup of finely chopped chives
½ cup of roughly chopped flat leaf parsley
Ingredients for dressing:
½ cup Champagne vinegar
1 ½ cups of Nocellara Italian EVOO
¼ cup honey
1 tsp crushed red pepper
1 tbsp Dijon mustard
Salt and Pepper to taste
DIRECTIONS:
Method of Prep for Salad: Trim off the bottoms of the asparagus and lightly coat in oil, salt, and pepper. Grill them until tender and set them aside to cool. Combine the rest of the salad ingredients in a large mixing bowl. Cut the asparagus into one-inch pieces and add to the bowl with the rest of the salad. Lightly season with salt and pepper.
Method of Prep for Dressing: Whisk together all the ingredients except the oil in a mixing bowl. Slowly incorporate the oil while whisking the mixture continuously to emulsify. Adjust the seasoning and drizzle over the salad using as much of the dressing as you desire.
